Default confused

I am getting a check engine light that is confusing me. It will come on when I am running on either tank, but I can shut off the Truck and restart it 2 min later and the light will go away. I have done a power flush on the radiator, although the thermostat may be a 160 degree instead of 180 degree. I could be wrong the exact degrees. It doesn't seem to happen in the winter so it leads me to think it might have something to do with the cooling system. Maybe fuel, or exhaust? Please help me figure this out.

1991 F250 XLT Larait
C6 with overdrive.
Extended cab long box.

The correct thermostat for that engine is 195.

If you are getting a check engine light, you need to read out the codes.
